I left a cushy job to become a bartender and it was not an easy decision. The world thinks you are a fool, but then believing in yourself and following your passion is all that matters in the end. I found my Ikigai as a bartender. In spite of being Food & Beverage Manager for a four- star hotel in Dubai 1995 and later at Hans Plaza, New Delhi in 1996, I realized that I had most enjoyed my role as a bartender way back in 1993 at Oasis Discotheque at Hyatt Regency, New Delhi, and later being a Head bartender cum Captain at CJ s Le Meridian, New Delhi. During this period, I got much fascinated by flair bartending post watching the movie Cocktails & Coyote Ugly. I worked hard to become India s first flair bartender in 1993. For a few days I was mentored in flaring & bartending by Andrew Red, the gentleman who was an ex-flair bartender with TGIF, London. Andrew kind of inspired me and ignited a spark in me. Later at the young age of 25, I went to Dubai for better career prospects in life, but could not get bartending out of my system. In 1996, I took a plunge and started my own Alco Beverage Academy and Catering Company from a small room in a village called Lao Sarai, New Delhi. My firm was called “Shaken or Stirred” which later became a private limited company by the name “Institute of Bar Operations & Management” and eventually “Barwizard” now.
In 1996, Sandeep Verma, also known as Sandy, started his company Institute of Bar Operations & Management (which later evolved into Barwizard) for several key reasons:
Despite holding prestigious management positions in Dubai and New Delhi, Sandy's true passion remained bartending, particularly after being inspired by flair bartending, a style that involves entertaining guests
Late 90’s, Sandy recognized the opportunity of bartending as career, which in India was often looked down upon & considered an undesirable career path. The bars and the bartending industry were unorganized, creating a significant shortage of decent watering holes for a common man to go and unwind & skilled professional bartenders to serve.
Returning from an international work environment, Sandy realized the need to glamorize the profession in India by incorporating flair, entertainment, creative customer experiences, and innovative cocktails that appeal to senses of masses.
In the early 2000s, Sandy observed a surge in entrepreneurs opening bars and pubs, leading to exponential growth in the bartending industry and increased demand for skilled professionals. In 2003, he started an IP called “Barwizards”, a national bartending competition to award and reward the evolving talent, and to get the profession recognition and respectability.
Sandy understood that global connectivity and tourism were constantly bringing in new international trends in mixology and flair, and only the best and most innovative would succeed in this competitive landscape. He, at his own costs, flew in international bartenders and world champions to train bartenders in India
The competitive market fueled a desire for unique and memorable events, particularly in the event and party circuits, further driving the demand for highly skilled bartenders.
Ultimately, Sandy aimed to establish a network of the best and most reliable bartenders and trainers, both in India and internationally, to meet the evolving demands of the industry.
